| 15 oz canned chicken broth, divided |
| 1 large onion(s), chopped |
| 15 oz canned cannellini beans, rinsed and drained |
| 6 oz water-packed tuna fish, drained, flaked with a fork |
| 15 oz canned diced tomatoes, undrained |
| 1/4 tsp dried oregano |
| 1/2 tsp table salt |
| 1/4 tsp black pepper |
| 1/4 cup(s) basil, fresh, chopped |
Instructions
- In a medium pot, heat 1/4 cup of broth over medium-high heat; add onion and sauté until tender, about 5 minutes.
- Add beans, tuna, tomatoes and oregano; stir in remaining broth and simmer for 5 minutes. Stir in salt, pepper and basil; simmer for 1 minute more. Yields about 1 1/4 cups per serving.
This meal is sooooooooooooooooo Yummy! I was very skeptical as who would think that TUNA fish in a soup would be delicious and fulfilling but it really is. Not only is it fulfilling but it is great for ones wallet and took about 15mins to make. Serve it with a grilled cheese sandwich and the entire family may just think you are a gourmet chef.
